Cream of mushroom soup was always like a bowl of comfort when I was growing up. So creamy, so satisfying and so delicious.

Cremini Mushrooms


This raw, non-dairy version of this old favourite taste so much like my memories that I am always left smiling.

Of all the healthy soup recipes that I have created this cream of mushroom soup is my most loved soup to make.

Cream of Mushroom Soup

Cream of Mushroom Soup Recipe, non dairy


INGREDIENTS:

  • 1 cup Brazil nuts, raw and soaked
  • 16 oz Mushrooms, cremini or mushroom of your choice
  • 3 cups water
  • pinch sea salt

INGREDIENTS FOR GARNISH (optional):

  • 1/4 cup Brazil nuts, raw and soaked
  • 1/4 cup water
  • 1 tbsp mushroom, diced finely

Soak Brazil nuts for about 30 minutes. Rinse and drain. (tip: use the soak water to water your plants)


Make Brazil nut milk by putting 1 part Brazil nuts to 3 parts water in your blender (I use a Vitamix Blender). For this recipe use 1 cup Brazil nuts to 3 cups water.

Blend well and then strain through a nut milk bag placed over a bowl. Nut milk bags are very convenient to have but if you don't have one you can use some thin nylon or cheesecloth.


Brazil Nut Milk - How to Make


Squeeze the nut milk bag getting as much of the milk out as you can. Rinse the blender and then pour the milk back into the blender.


Recipe note: This brazil nut milk can be used as a base for smoothies or anywhere you would normally use milk. The pulp that is leftover can be used for cookies, cakes, smoothies, etc.


Add the mushrooms and sea salt to the milk in the blender and blend well. If you want your soup slightly warm run the Vitamix blender for a bit longer and the soup will heat slightly.

Garnish with a drizzle of cream (raw vegan cream, see directions below) and a sprinkle of finely diced mushroom.

To make cream for garnish follow the directions above to make brazil nut milk but use a ratio of 1:1. So, for this recipe use 1/4 cup brazil nuts and 1/4 cup water. This will make a thicker milk (cream) that you can drizzle over the top of your soup.
